Protein-Style Grass-Fed Burgers

Goodness gracious, I love a good burger. I love the contrast of smoky, chargrilled, juicy meat with layers of crisp lettuce, tart tomatoes, sharp onions, and briny pickles all in one bite. I wasn’t really into burgers as a child (was more of a chicken nugget and french fries kind of gal), but my affinity for them has exponentially grown over the years.

I introduced grass-fed meat into my diet a couple of years ago - it’s leaner, more nutritious, and actually tastes “beefier” in my humble opinion. Here’s an easy burger recipe you can make at home or throw on the grill any day of the week- it’s Paleo, Whole 30, and Keto with the lettuce “bun”, but feel free to dress it up anyway you like however you choose to eat. For the adventurous, add in some ground liver to make this extra nutrient-dense. Turkey, lamb, or salmon patties would work too.


PROTEIN-STYLE GRASS-FED BURGERS RECIPE

Makes 4 servings

INGREDIENTS

  • 1 lb of grass-fed ground beef, or any ground meat of your choice

  • Salt + pepper

  • Avocado oil, ghee, or grass-fed butter

  • 1 head of lettuce (I used Bibb)

  • Toppings of your choice - beefsteak tomatoes, pickled red onion, avocado

METHOD

Divide 1 lb. meat into 4 patties, be careful not to overwork - loosely packed is best to keep the meat tender and juicy. Season patties liberally on both sides with salt and pepper.

Heat up a cast iron pan on medium-high heat and drizzle a bit of avocado oil or ghee to coat the pan. Place two patties into the pan, and sear on each side for 3-4 minutes. Be careful not to flip too early, you want to create a nice crust on the meat for flavor and texture. Remove patties and set aside, and repeat with the remaining 2 patties. Rest the patties after cooking to allow the juices to redistribute.

Load up your grass-fed patties on lettuce buns and fixings, and slather on that incredible chipotle lime mayo sauce. Serve with roasted veggies or oven fries. Great for dinner parties and backyard barbecues so everyone can build their own to their liking.

Omit black pepper and tomato for AIP.
